Rotary/agitating retort is suitable for viscous product as cream, soup and vacuum packed product and some product that needs a rotation effect of cooking as cooked rice processing. Agitation can improve the product quality by reduction of processing time. Hence, head space in the container must be considered as a main factor for making a bubble of mixing during agitation. The heating media of this system can be use steam, steam water spray, water immersion, steam and air.
